With its many coffee-producing regions, microclimates and climbing altitudes, Colombia has constantly provided excellent producers of coffee. Exceptional smallholder producers dominate the industry with beautiful coffee growing throughout the regions.
Located southwest of Antioquia, is the department of Urrao. With two fertile valleys and the rivers of Penderisco, Urrao is mainly agricultural land, providing vegetables for Medellin. This, coupled with the high altitudes make it an ideal location to grow coffee and avocados.
Pergamino's presence in Urrao started back in 2014, with it actually being one of the first areas in their Producers Allied Project. This all began after a coffee from Antioquia placed in the top ten of the Cup of Excellence competition for the first time in history. The coffee was purchased successfully with Mercanta's assistance, and Pergamino has since been learning about the local variety, Chiroso and Urrao climate. The focus is strong on growing the Chiroso varietal for its good yield, high resistance to diseases and cup quality.
Owned by Fray David Moreno, this coffee comes from Finca El Rosal. Fray was one of the first to begin working with Pergamino and has then become an important member of the community. He handpicks the cherries during harvest, and brings them to his own mill where they are then washed and pulped. The coffee then goes through a mixed fermentation for 3 days to breakdown external mucilage. Afterwards, the coffee is dried under the sun while being covered by plastic to prevent rain and moisture. The coffees are bagged, and sent to the Pergamino dry mill in Medellin to be hulled and exported.
An elegant cup, expect a distinct mix of tartaric and citric acidity with a round body mouthfeel that complements the honey-like sweetness.
