The finest beans of Brazil hail from Minas Gerais, which have cool, green hills that provide ideal conditions for coffee production.
However, it was before this that the landscape was difficult to move various agricultural products, which was quickly solved by using horses as a mode of transport. Groups of men with horses became common and created the trails in the rugged terrain while delivering goods. The cultural practice was preserved, and coffee became accessible. Coffee production soon became widespread by the end of the 19th Century.
At Fazenda Mundo Novo, the team highly values protecting the surrounding environment while simultaneously growing exceptional coffee. Yellow Bourbon, Mundo Novo, Acaia and Red Catuai to name a few, are grown on this farm.
Mundo Novo is a naturally processed coffee. After the cherries are harvested, they are delivered to the mill where they are left to dry on concrete patios and afterwards finished in mechanical dryers.
The cup comes out balanced, with notes of yellow fruits underneath that are coupled with a dried apricot sweetness. Familiar hints of milk chocolate are revealed and are followed by a cashew nut-like finish.
