This coffee is produced by Cafe Granja La Esperanza (CGLE), a renowned Colombian farm committed to sustainable practices and innovation in coffee cultivation. Known for exceptional quality and diverse coffee varieties, the farm benefits from ideal growing conditions and meticulous attention to detail.
The coffee undergoes careful processing, including a manual and rigorous picking and fermentation in whole cherries for 48 to 50 hours with controlled temperatures. Coffees are only collected when in the ideal maturation. Afterwards, the coffee is left in the silo and transported to solar drying for up to 15 days. They are then stored for a month to stabilise and reduce the astringency of freshness.
A sweetness similar to black grapes accompanied by the aroma of rum first hits, and as it cools, a raspberry acidity emerges, coupled with a syrupy and long cherry liqueur finish.
Recommended to rest beans for 7-10 days from roast date before consuming.
