With its numerous coffee-producing regions, microclimates, climbing attitudes and excellent producers, Colombia is one of the world's top producers with bountiful yields all year round. El Limon is harvested in Cauca, one of the most famous regions in Colombia, that boasts a stable microclimate and making it ideal for coffee production.
The varietal Bourbon de la Montaña grows in a farm belonging to Floresmiro, which is located in a high-altitude village in Inzá. Here, the fully ripe cherries are handpicked with care and are transported to the wet mill. They are sorted and de-pulped to remove external fruit.
Afterwards, the cherries are fermented for 48 hours without water and are then placed on raised beds and dried under plastic. Only when these cherries have reached optimum moisture content are they then delivered to Pergamino dry mill in Medellín to be hulled and prepared for export.
El Limon carries a high vibrancy and juicy profile. Soft and delicate on the palate, yellow florals are present in every sip, followed by a stone fruit sweetness that is reminiscent of apricots. The cup ends off with a honey-like finish and sweetness.
