Grown in the renowned Yirgacheffe region of Ethiopia, this coffee comes from a collection of smallholder producers in the town of Gedeb. Although an ancient and rich coffee-producing region, countless threats such as climate change and alterations to the environment are still apparent.
Producers in this area collaborate with agricultural development agents to combat quickly upcoming obstacles, such as warmer conditions, multiplying coffee pests and even fluctuating market costs. Projects include removing older trees to replace them with more sustainable varieties and also fair trade and prices with producers.
Soil health regulation is also done to maintain the quality of coffee. Compost is added to the soil and shade trees are planted throughout each farm. This provides an ideal climate and promotes nutrient health within the soil.
Gargari Gutity SN is processed using a unique ‘Supernatural’ method. Unlike traditional Ethiopian natural processing, where cherries are spread thinly on raised beds and dried under direct sunlight, this method dries cherries in thick layers inside semi-permeable boxes on racks. This restricts sunlight exposure while allowing controlled airflow and oxygenation. The slower drying process enhances natural fermentation, resulting in deeper sweetness and greater complexity. To maintain consistent quality and prevent over-fermentation or mold, temperature, Brix, and moisture levels are closely monitored and adjusted as needed.
Expect intense floral notes of violets and elderflower, complemented by high sensations of sweetness. This harmony of flavours evokes the rich, luscious depth of drinking blackcurrant juice.
