Commonly known as Vertentes, the cool, green hills of the region make for an ideal condition to produce quality coffee. The owner of Fazenda Samambia, Henrique Dias Cambraia, believes that his success comes from the geographic location, competent management of the plantations, constant quality control training and most importantly, the involvement of the whole team. The farm also produces high quality coffee in a socially responsible way and uses environmentally friendly methods.
In addition, Henrique constantly attends events held by the Association of the Coffee Producers of Southern Minas Gerais and other similar bodies. This ensures that the farms of Dias Cambraia remain relevant and aware of new technologies and techniques.
For this special lot, cherries are first selectively harvested in thick layers on patios. The drying process then slows and encourages aerobic fermentation. The cherries are left to ferment for up to 48 hours, or until ideal temperature. Afterwards, they are spread evenly and thinly to completely dry and until ideal moisture content is reached.
This results in a velvety and smooth cup that carries notes of dried fruits that are reminiscent of cranberries with a macadamia and cacao nib finish.
Recommended to rest beans for 7-10 days from roast date before consuming.
