El Borbollón was one of the earliest coffees we purchased from El Salvador during our early years of roasting. We first selected it for its complete, dependable cup. Bringing it back today pays tribute to our days as young roasters, and the consistent quality it continues to bring. Today, it forms part of our signature Equilibrium blend.
El Borbollón is produced by the Alvarez family. Their farms sit on the fertile volcanic slopes of Santa Ana, where rich soils and a mild mountain climate create ideal conditions for growing Bourbon. The family continues to dedicate both farms exclusively to this variety, preserving a tradition that has endured despite the challenges Bourbon presents in the field. Cherries are selectively hand-picked before being dried slowly on traditional clay patios, a method the family continues to favour for its ability to regulate temperature and encourage even, gradual drying.
The result is a coffee that feels reassuringly complete. Gentle yellow plum and mild dried apricot bring soft fruit character, while roasted almond adds depth and a familiar richness. Brown sugar sweetness lingers through a smooth, rounded finish, creating a cup that is bold enough for espresso yet effortlessly enjoyable as a daily coffee.
