Fazenda Rio Verde is one of Ipanema’s largest farms, but its Premier Cru coffees come from a much smaller part of it.
At the farm’s highest elevations, the land is divided into individual plots known as glebes. Each has its own altitude, sun exposure, soil and coffee variety, allowing Ipanema to work with them as distinct lots rather than treating the farm as one uniform harvest.
Black H38 comes from one of these plots. Grown entirely with Yellow Paraiso, the cherries are left to dry naturally on the tree before being harvested, then dried further on patios and in vertical dryers. It is an unusual approach, but one that suits the character of this coffee particularly well.
Black H38 still has the rounded richness many people may recognise from Brazil, but red date-like fruitiness gives it another dimension, followed by walnut and milk chocolate as the cup cools.
